He, Sharkey and Sarago recently discussed their plans while seated in the spacious first-floor ballroom at Fredericksburg Square, which features high ceilings, brass chandeliers, a fireplace, hardwood floors and a beautiful wooden bar. They plan to leave the same space, although they have hired Fraser Wood Elements at 1023 Caroline St. to fabricate new table tops.
The idea is to offer a casual bar in “a very unexpected upscale environment,” Mote said.
Fredericksburg Square will initially offer seven beers from the Water’s End locations in Lake Ridge and Woodbridge, including flagships Damn Beer Golden Ale and Don’t Haze Me Bro! APIs. The partners eventually plan to build an 1,840 square foot brewery building in the backyard of the property and add a beer garden. They hope to expand their roster of taps and brew beers that reflect local tastes. Wines and spirits will also be available.
The new location will offer the WE Beer Club, which is also available at the other two Water’s End locations. It offers perks like discounts, merchandise, and access to exclusive events for an annual fee.
“It wasn’t created to make money,” Mote said. “It’s to build a community.”
Hot Chikn Kitchn will also operate on the first floor. It specializes in Nashville-style hot chicken dishes such as sandwiches, tenderloins, and wings that get their heat from sauces rather than rubbing. They come in four levels, ranging from Base, which is infused with cayenne pepper, to Medic, which blazes with Carolina Reaper pepper.
